The name started with a flood. Tim Liao opened his Rancho Viejo Road shop in 2015 as Coast Coffee and Tea. One night the sprinklers went off, and the shop needed three weeks of repairs. When it reopened, he hung a sign that read "Tim is making great coffee again," as he told the Orange County Register. Customers liked it, and Tim is Making Great Coffee went on to place No. 10 on Yelp's list of top U.S. coffee shops in 2022 and No. 21 in 2025.
That name was set to retire on Thursday, Oct. 22, after more than a decade at 31431 Rancho Viejo Road. The cafe replacing it pairs coffee with sushi, and the other new independent cafes in San Juan Capistrano, open now or on the way, each pair coffee with a second reason to come in. Until the new ones arrive, the best way to plan your mornings is to know which existing shops already work that way and which part of the day each one covers.
Darkside keeps the mornings and adds the evenings
Liao and his business partner, Chris Schaffner, are turning the space into Darkside Coffee, a Japanese sci-fi-inspired cafe. According to the Register, the daytime side will be a Japanese-style coffee bar serving breakfast from 7 a.m. to 2 p.m. From Thursday through Sunday evenings, the room will host omakase seatings with high-end sushi and sake, in what Liao calls a "speakeasy feel." He plans to keep the omakase low-key and share tasting menus quietly instead of advertising them widely.
Liao is aiming for early February 2027, after about three months of renovation to give the room a lounge atmosphere. That date is a target, and build-outs often run long. He told the Register he wants regulars to know he's coming back to a place he called "such a big part of the community," and added, "We're trying to bring more colorful places to the area."
So the one shop the coffee crowd knew best is coming back with a second business inside it. The rest of town has been moving the same way.
Wade's moved its date, and its concept is the draw
The next cafe due in town has also slipped. Wade's Coffee House, from Colin Dubel and Chelsea McCrea, is going into Suite C-1 at 32382 Del Obispo St. In May, WhatNow reported a fall 2026 opening, and the Capistrano Dispatch expected it before the end of the year. In early October, the Register described it as still in build-out and slated for winter 2027.
The owners call it California's "first and only honky tonk coffee shop." According to the Register, it will have country music, "strong coffee," leather seats, an outdoor patio and "Nashville vibes." Children and dogs will be welcome at the Vermeulen Ranch Center cafe, and the paper noted that it will have free, ample parking, "an increasingly rare San Juan Capistrano feat." The pitch on its Instagram centers on the room as much as the cup.
That makes two cafes on the 2027 calendar, both built around an experience on top of the coffee, and both aiming for the back half of this winter at the earliest.
True Love already showed how it works
The clearest local example has been open since February 2025. True Love Coffee Co., at 32122 Camino Capistrano #100, comes from Lee Lizotte with help from his brother, Dana. Lizotte started as a barista in his early teens and worked his way up to head roaster. The shop sources and roasts seasonal, traceable coffees and is open daily from 7 a.m. to 4 p.m.
The coffee is only part of it. A January 2026 profile in The Express describes an enclosed patio with umbrellas, tables and green turf, plus a bin of blankets for sitting outside on cool mornings. It also describes a vintage theme throughout and a partner clothing shop, Freenote Clothing, inside the cafe. The same piece quotes a San Clemente family who drove past closer shops to get there and called the setting "very kid friendly, which you don't see often at coffee shops."
The pairing holds on Rancho Viejo Road too, where one chef now runs two doors side by side.
Rancho Viejo Road becomes one chef's block
31654 Rancho Viejo Road sits in the Ortega Shopping Center, where chef-owner Michael Campbell has reshuffled his storefronts. His Pacific Pearl Café moved about 20 steps into a larger space next door, according to Patch. Its old space became The Shore, a Hawaiian street-food and shave-ice counter in Suite G, with an announced grand opening of Aug. 1.
Pacific Pearl now lists Suite K and daily hours of 8 a.m. to 4 p.m., serving coffee alongside breakfast, lunch and catering. The Register calls the cafe the launchpad for Campbell's catering business. He also runs Capo Comidas Californios at River Street Marketplace and White Rooster in Dana Point. Next door, The Shore makes its shave-ice syrups in house from real fruit, using local produce when it can, and the savory side runs from a North Shore shrimp truck bowl to a double-decker Spam musubi.
A morning coffee and an after-school shave ice now sit next door to each other in the same center. Elsewhere on the road, Bad to the Bone BBQ lists its restaurant at 31738 Rancho Viejo Road.
The winter map, by time of day
The hours below are the ones each business posts. Undated listings change without notice, so check before you drive over.

| True Love Coffee Co. | 32122 Camino Capistrano #100 | Daily 7 a.m.–4 p.m. | Courtyard, in-shop clothing |
| Ellie's Table at The Egan House | 31892 Camino Capistrano | Tue–Sun 7:30 a.m.–4 p.m. | Scratch breakfast, cinnamon rolls |

The earliest cup in town comes from Café at the Mission. It's the one hotel option on the list, opening at 6 a.m. with a Draft Latte program and outdoor seating that looks onto the Mission. For a later afternoon cup, Hidden House Coffee in Los Rios stays open until 5 p.m. and roasts at its cafe and roastery on East Santa Ana Boulevard.
Ubuntu Café is the only one on the list that runs into the evening. River Street Marketplace describes it as an all-day cafe serving California-inspired, globally influenced food made with local and organic ingredients, open until 9 p.m. Tuesday through Saturday. That evening window is the one Darkside plans to fill with omakase, Thursday through Sunday.
Ellie's Table at The Egan House is closed Mondays, which leaves Monday-morning regulars choosing among the other five on the list.
Two more spots don't fit neatly in the table. Délice Breton is a French cafe, bistro and crêperie a few minutes off I-5 with easy parking. It has a growing French grocery section, a small library corner, a patio and French story time for children. Over on Del Obispo, JD Flannel Donuts & Coffee at 31878 Del Obispo St., Suite 122, pairs doughnuts with coffee. Its location page lists Wednesday through Sunday, 7 a.m. to 2 p.m., but that page dates to 2022, so confirm before you go.
The dates to watch this winter
- Through the holidays: the old Tim's space at 31431 Rancho Viejo Road is under renovation, with roughly three months of work planned.
- Early February 2027: Darkside Coffee's target reopening, with a 7 a.m. to 2 p.m. coffee bar and Thursday through Sunday omakase nights.
- Winter 2027: Wade's Coffee House's current target at the Vermeulen Ranch Center on Del Obispo.
Both openings are targets, and Wade's has already moved once. Until then, the shops on the table above are the ones open now.
If you're a regular at one of these counters and the coffee map is part of how you weigh a move across town or a sale down the street, I'm happy to talk through the corners of San Juan Capistrano I know well. Vasi Vangelos is always glad to meet for a cup. Let's Connect.
